Rhubarb

Rhubarb (Rheum rhabarbarum) is a perennial herb belonging to the plant family Polygonaceae, genus Rheum. It can reach 1-2 m in height and has strong rhizomes and roots developed deep in the soil. It grows tall, edged petioles, green, pink, sometimes red, or even purple. The leaves are very large, cordate, arranged in rosettes. The flowering stems are up to 1-2 m tall, hollow inside, and have small, greenish-white flowers clustered in the upper part of the stem. The fruits are brown achenes with a single seed.
