Potato (Solanum tuberosum) is a perennial herbaceous plant of the Solanaceae family, cultivated for its edible tubers. The plant has a branched stem and alternately arranged leaves of unequal size and shape. It produces white or blue flowers and yellow-green berries. Potato tubers grow located underground and generally in the top 25 cm of soil. Tubers vary in color from yellow to red or purple depending on the variety.
